Chocolate Chip Cookies

Ingredients

  • 1 cup butter room temp, salted or unsalted (2 sticks)
  • 1¼ cups light brown sugar packed, *high altitude reduce to 1 cup
  • ½ cup granulated sugar I used organic cane sugar, stays the same for high altitude
  • 2 large eggs room temperature
  • 1 tablespoon vanilla extract
  • 3 cups unbleached all-purpose flour add 2 tablespoons for high altitude
  • 2 teaspoons corn starch
  • 1 teaspoon baking soda
  • 1 ¼ teaspoons kosher salt add ¼ teaspoon if using unsalted butter
  • 2-3 cups milk chocolate chips I used 1 ½ 11.5 oz
    pkg Ghirardelli

Instructions

  1. Beat the softened butter until light and fluffy, about 1 minute. Add both sugars and continue beating until creamed and smooth, between 3-5 minutes, scraping down the sides of the bowl about halfway through. (You may use a hand mixer, but l believe a stand mixer does a better job creaming the butter and sugars here)
  2. Add eggs one at a time, mixing on medium speed,
  3. 1 minute per egg -- then mix in the vanilla. Scrape the sides of the bowl to mix the ingredients completely.
  4. In a medium bowl, combine the dry ingredients; flour, baking soda, corn starch and salt and whisk well to combine.
  5. With mixer on low speed, add the flour mixture to the wet ingredients, a little at a time. Mix just until combined and there are no more visible streaks of flour. For the best results DO NOT OVERMIX if you want chewy, soft cookies.
  6. Add the chocolate chips. You can either fold them in by hand or use the lowest setting on your mixer.
  7. Scoop out a heaping ⅓ cup of cookie dough (4.2 ounces/117 grams if you are geeky like me) and pinch the dough ball in half, turning the top off upside down on top of the bottom of the half, jagged side up. Place cookie dough ball 2-3 inches apart on prepared baking sheets. I used a large cookie scoop.

    1. This is a no chill cookie recipe, however; if your dough is really really soft, due to heat, humidity, too soft or water of butter, then I suggest chilling the cookie dough in the refrigerator for 10-20 minutes before baking.
    2. Bake for 10-12 minutes, and not a minute longer!
The cookies should be just barely golden at their edges and slightly firm in the center. Leave them to cool on the pan for 10 minutes, then move them to a wire rack to finish cooling.
    3. Store cookies in airtight container on counter. May be frozen up to 3 months. To freeze dough balls, place dough balls on tray and flash freeze for one hour until firm, then transfer to an airtight container and freeze up to 3 months. Bring dough balls to room temperature before baking.

    Notes

High Altitude Crumbl Cookie Recipe Adjustments

    • Reduce brown sugar to 1 cup, packed
    • Keep granulated sugar at ½ cup
    • Add 2 tablespoons all-purpose flour to the 3 cups.
    • Everything else stays the same.

It is really important that your oven be at the correct temperature. If you are unsure, as many ovens run a little hot or cold, use an oven thermometer to determine if your oven runs hot or cold and adjust accordingly.

    Save

  1. Preheat your oven to 375° F (190° C) and position your rack in the middle of the oven.
Line a cookie sheet (half-sheet pan) with parchment paper for the best results, I usually use 3 cookie sheets.
  2. Beat the softened butter until light and fluffy, about 1 minute. Add both sugars and continue beating until creamed and smooth, between 3-5 minutes, scraping down the sides of the bowl

Fresh Summer Desert

1 can frozen lemonade 12oz. 1 container cool whip (1 pound) 1 container cream cheese (1 pound) Mix all three ingredients with a wire whisk. You might want to set out the cream cheese to soften. I used my hand mixer. Pour into 2 large graham cracker crust. Let stay in fridge for at least 1-2 hours. For taste and appeal you can add yellow food coloring and lemon zest. You can do this with Orange or other flavors.

Berry Trifle

Ingredients

1 angel food cake, cut into cubes you can make your own or use store bought

1 3.4 ounce box instant vanilla pudding mix

2 cups cold milk

8 ounces cream cheese, room temperature

1 cup powdered sugar

8 ounces Cool Whip, thawed

2 pints blueberries

2 pints strawberries, sliced

Instructions

1- In a small bowl, combine the vanilla pudding mix with the milk and whisk for two minutes; set aside.

2- In a large bowl, beat the cream cheese on medium speed until smooth and creamy, 2 to 3 minutes. Gradually add the powdered sugar. Beat until combined and smooth.

3- Add the prepared pudding to the cream cheese mixture and gently fold and stir until completely combined. Add Cool Whip to the bowl and fold it into the mixture until no white streaks appear.

4- To assemble the trifle, alternate layers of angel food cake, blueberries, the pudding mixture, strawberries and so & on, until you get the top. You can mix strawberries and blueberries in the same layer if desired.

5- Add a final layer of the pudding mixture, then arrange the remaining strawberries and blueberries in a decorative pattern. Serve immediately or cover and refrigerate until ready to serve.

This tastes the best within 24 hours of making it, but leftovers can be stored in the refrigerator for up to 2 days.

S’more Bars

Ingredients

  • 1/2 cup butter room temperature
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1cup White Kamut flour +1 Tablespoon

  • 3/4 cup graham cracker crumbs (6 full crackers)
  • 1 tsp baking powder

  • 1/4 tsp salt
  • 2 king-sized Hersheys milk chocolate bars or chocolate chips (Jacquelyn used semi sweet)
  • 1 7 oz jar Jet-Puffed Marshmallow creme

Directions

  1. Preheat the oven to 350 degrees. Grease an 8-inch square baking pan.
  2. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at low speed until combined.
  3. Divide the dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough, 2 king-sized Hershey bars should fit perfectly side by side, but break it if needed to fit in a single layer. Spread marshmallow cream over chocolate. Place remaining dough in a single layer on top of the fluff/cream (most easily achieved by flattening the dough into small shingles and laying them together)
  4. Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars. (Although these are divine hot as well)

Snicker Doodle Cookies

2 Cups shortening
3 Cups sugar
4 Eggs
5 1/2 Cup flour
4 tsp. cream of tartar
2 tsp. soda
1/2 tsp. salt

Roll into balls and then into cinnamon / sugar mixture. bake at 350* for 10-12 minutes, or until lightly browned.

Cheese Cake (Cooked)

Crust:
9 Tbsp Melted butter
9 Tbsp. sugar
18 graham crackers crushed
10 in. spring form pan

Combine all the ingredients and Press firm on bottom of pan, I usually line the pan with foil before pressing the crust, helps remove from the pan easier.

Bake at 325 for 8-10 min

Filling:
5 packages of cream cheese (ROOM TEMP)
1/4 C. Flour
1 1/4 sugar
1 1/2 Tbsp Vanilla
5 large or extra large eggs (ROOM TEMP)
1 1/4 heavy whipping cream

Whip the cream cheese first by itself til smooth. Add flour sugar and vanilla and mix well. Slowly add the eggs and whipping cream while mixing. Be sure to scape the bottom and mix until all is blended, do not overblend or blend on high, this will produce air bubbles making cracks during the baking. Another thing to prevent the cheesecake from large cracks, place a pan of water on the rack under you're cheesecake's rack. Bake at 325 for 65 min. Turn off oven and keep in there for 30 min....very important not to open the oven throughout this process because it will crack. Remove from oven and let it sit out on wire rack to cool for at least 1hour until it has completely cooled. Cover then refrigerate 24 hours. Release from spring form pan right before serving.

It's okay if it cracks, usually every 1 out of 3 I've made tends to crack. It will still taste great and there are plenty of toppings out there to cover it.
